Bari is the capital city of the Puglia region, located along the Adriatic coast and it is characterized for the intense trade exchanges and for being the city of Saint Nicholas, the patron of which it conserves the body. In the last times other new areas have been added, in function of the trading and industrial development of Bari, being the most important center in the lower Adriatic for the traffics with the East. The cuisine of Bari it is based on three main products that are cultivated in the Apuean region: corn, olive and wine, as well as vegetables and fruits that are found in great abundance on the territory. Optimal and renown is the pugliese bread, and also the local pasta in the different shapes named the recchietelle, chiancarelle, lagane, troccoli, fusilli, cavatelli and mignuicchi. Moreover, with the home made pasta are cooked calzoni with onion slices, anchovies, capers and olives or panzerotti are prepared also fried filled with lardo fat and annealed or mozzarella, or the tasty pizzas and the typical focaccia alla Barese. Very delicious are the spoups and between the main meat courses, those of lamb, pig, rabbit and game and poultry as the typical tordi conserved in a white wine sauce. In the fish corses, it is suggested to taste the dentex in olive sauce, gilthead Saint Nicholas style, anchovies arracanate and tender young octopus in casserole. The extra virgin olive oil reign as the preferred dressing with garlic well combining with vegetables and salads. The dessert is composed of the optimal fresh fruits and the typical tasty sweets of the local tradition are called cartellate, taralli, royal pastes, castagnedde, sassaniidde and callume. As far as the regional wines it is suggested to order a bottle of Primitivo, but also Castel del Monte, Moscato di Trani, the white wines of Valle d'Itria, Aleatico and other varieties.
Bari has always had a detached merchant vocation and many industries have developed in the several branches, most of the factory are located in the industrial zone, set outside the city, ranging between Bari and Modugno, Pole, Bitonto and Molfetta.
